Cajun Land Mashed Potatoes
- A few handfuls of whole new red potatoes, un-peeled.
- Black Pepper
- Ball's Cajun Seasoning or you can use a little garlic salt and cayenne pepper instead
- One yellow onion, cut in halves.
- 1 cup of your favorite white wine.
- Optional link sausage and bay leaf
- 1 cup of Cream or Milk
Boil your whole new red potatoes in water with 2 or 3 tablespoons of the Cajun Land Complete Boil, the wine, some butter, the onion halves, some black pepper and a few shakes of Cajun seasoning or use the garlic salt and cayenne pepper instead of the Cajun seasoning.
Lagniappe: add a bay leaf and one link sausage that's been cut into bite sized pieces, too. The sausage really adds a lot of flavor to the potatoes, but this addition is not for everyone.
When the potato is soft and easily separates from the skin, take them away from the heat, drain most of the water from the pan, leaving a little, add cream/milk then mash the potatoes add more butter and sprinkle Cajun seasoning over them again. Then I close the lid and let them sit until they are ready to serve.

By the way, the more they sit the better they get! Makes delicious leftovers!
