Zatarain's Black-Eyed Peas and Rice (otherwise known as Hoppin' John throughout the South) is great all by itself if you're in a hurry or as a side dish to a larger dinner. This is really one of my favorites! You can add some ham hock or bacon, if desired, but you don't really need to. Sometimes I add a little diced green pepper. Also, I add an additional 1/4-cup of water to mine - it just depends on how thick you prefer it. A great dish with a rich heritage.
